The Tasting Club and Dr. Wine launch "Winederlust Wednesdays"

Dr. Wine, the social chic French bistro & wine bar of Poblacion, has teamed up with The Tasting Club to develop an exclusive program of monthly Wine Dinner Explorations.

Named "Winederlust Wednesdays", the program aims at hosting a unique wine dinner affair monthly, featuring awarded and representative wines of different major wine regions in the world. And for the dinner pairing menu, resident Michelin-starred Chef Alain Raye is in charge of creating the fine dining experience.

The idea behind "Winederlust Wednesdays" is to create a monthly soirée for wine enthusiasts to experience the most popular wine regions of the world with top rated wines paired with an opulent wine dinner menu.

The setup is social and cozy with all guests siting together on a family style table in the private room of Dr. Wine’s 3rd Floor. "This is also a great way to meet new people and make new friends" adds Kevin Charuel, founder of The Tasting Club. The seating capacity is limited to 16 guests to ensure a pleasant and harmonious experience to all attendees.

All wines are curated in order to present each featured wine region generally, depending on its production and own qualities, and can introduce either well established wineries or trendy winemakers. Between five to eight wines can be presented all throughout the dinner, ranging from sparkling to sweet wine, with the most popular varieties or types of blend we can find locally, but also regional gems.

For the 1st edition of "Winederlust Wednesdays", which was hosted last Wednesday, May 18, the featured wine region was Victoria and Yarra Valley in Australia. Seven wines were presented during the dinner and included a very popular Australian sparkling wine, a Chardonnay, a Pinot Noir, a Cabernet Sauvignon, a Shiraz, a Shiraz - Cabernet Sauvignon blend and a famous fortified sweet wine produced since the origin of wine production in the region.

As for the wineries represented, one of them was a regional precursor for winemaking and another was a winery established only 30 years ago but already exporting its wines all over the world in fine dining restaurants. "This is how eclectic and exciting the wine selection can be" sums up Kevin Charuel.

Executive Chef Alain Raye and his team also bring a special touch to each "Winederlust Wednesdays" as they tend to create an exclusive menu for the evening.

Last May 18, Chef Alain prepared a generous Vermouth Cream Fish Trio in Blanquette Style (inspired by a French recipe calling traditionally for veal meat instead of fish) and two Whole Roast Lamb Legs Carved on Table Side with Classic Gratin Dauphinois, French Green Beans and Jus to be shared by all guests.

The diner menu also included a Homemade Cold Cut Selection, Aged Manchego with Pineapple Chutney, and Homemade Double Chocolate Ice Cream Sandwich.

The next edition of "Winederlust Wednesdays" will be on Wednesday, June 15, and it will feature 7 awarded wines from South Africa.

For the 5 course dinner menu, Chef Alain Raye will prepare a delicious French Fine de Claire Oyster Trio (Red Cabbage and Mignonette, Bloody Mary Granité & “Nage Glacée”), a Yellow Fin Tuna Tataki with Ginger and Vinegar Froth, a Homemade Couscous Royal with Lamb Merguez, Lamb Neck and Spiced Meatballs, an Oven Baked Reblochon with Nuts and Jamon and a Homemade Chocolate Mousse with Rhubarb, Olive Oil and Coffee Tuiles.
