When East meets West at Kobe Jones in Makati
"We believe presentation is key to stimulate the appetite and a meal should stimulate all senses" Chef Tom Hines
Visiting Kobe Jones in Salcedo Village is like embarking on an epicurean journey with two of the all time crowd's favorites: sushi & steak. But the experience does not stop here as the journey is meant to be truly exciting.
Founded and operated by Chef Tom Hines, who was previously running Wasabi and Smith Butcher and Grill Room, Kobe Jones is a new space blending delicious food, great wines and entertainment without being a fusion restaurant as the identity of both Japanese and European cuisines is truly preserved.
"Kobe Jones serves a contemporary repertoire of honest Japanese and European cuisine" Chef Tom Hines
When we visited this little gem, our tasting started with The Jones Seafood Platter that brings a fantastic selection of fresh sahimis (king fish, tuna, salmon), poke tuna, uni (sea urchin) and rainbow maki roll featuring salmon, snapper, crab, and bright red tuna. Served in a stunning enlightened ice platter, the show began when the waitress removed the enclosure to let the dry ice smoke escape in a dramatic way. The dish offered a great combo of flavours and it was more than enough to share for our party of 2 guests.
Our following course was a delicious Pan-Fried Miso Salmon Served with a Spinach Lemon Prosecco Risotto. The dish was both generous and delightful with a harmonious blend of flavors bringing a creamy texture with the risotto and an aromatic depth with the miso. This was truly original and delicious, a must try!
We then enjoyed the USA Prime Angus Ribeye 350g perfectly seasoned with the Kobe Jones Salt. The steak came with Hand Cut Fries, Creamed Spinach, plus a selection of appetizing homemade sauces: Chimichurri , Mustard, and Horseradish. We enjoyed it with a Decoy Merlot 2019 for a classic outstanding pairing which elevated our sensory experience.
Finally, for a bittersweet ending, we had the exquisite Green Tea Chocolate Mousse which pairs lavish layers of matcha and chocolate cream that is to die for. This was still perfect to enjoy with the red wine and again the serving was more than enough to share.
The rest of the menu includes other delicious dishes such as the Hand-Dived Scallops, Spinach, and Ikura Unagi Glaze, Pan-Seared Foie Gras Over Toasted Baguette and Wagyu Carpaccio with Caviar and Truffle. Naturally Chef Tom Hines also made sure to offer a fantastic selection of steak from Japan, Ireland, USA and Australia. The cocktail menu offers great classics but also special concoctions, such as sake based cocktails, and the wine list features fine wines that any enthusiast would appreciate as well.
