East Meets West with Chef Jereme Leung
Chinese gastronomy is one of the oldest and most diverse cuisines in the world. It offers a wide array of flavors and textures that no gourmet can’t resist. Traditionally divided into five gastronomic regions, Chinese repertoire always promises a true culinary experience when well executed with the right ingredients.
Last Thursday, July 20, we experienced a take on traditional Chinese cuisine at China Blue, Conrad Manila, with one of the most influential chefs in the modern Chinese culinary movement, Chef Jereme Leung.
For this special occasion, Celebrity Master Chef Jereme Leung concocted a unique tasting menu that we paired with fine wines from Wine Drop for an outstanding “East Meets West” tasting experience.
Like a work of art, our epicurean adventure started with a selection of appetizers including Marinated Lobster with Coriander Lime Jelly Dressing and Crispy Beancurd Sheet, BBQ Matsusaka Pork Neck and Deep-Fried Lychee Ball Dumpling with Traditional Sweet and Sour Sauce. Flavorful and highly sophisticated yet, it was perfectly paired with the elegant and zesty Champagne Martel, Victoire Prestige Brut (50% Pinot noir, 30% Chardonnay and 20% Pinot meunier), to open the palate with a mouth watering sensation.
Our second dish was a unique Braised Abalone Sea Treasure Roasted Duck Superior Golden Coriander Broth. Particularly well concocted, it was a harmonious and intense combination of flavors that stands on its own making it a memorable soup.
The delighful Beef Short Rib, slow-cooked and coated in green pepper barbecue sauce, was remarkably juicy and tender. We paired it with Domaine Josmeyer, Pinot Noir d'Alsace 2020 that features some of the finest Pinot Noir grapes from this region to bring a subtle fresh and lush character with notes of cherry and rose.
To follow, we had the delicate and aromatic Black Sesame Fried Rice with Dry Scallop Seafood, Spring Onion, and Egg White Pearl. With its unique texture, the Pinot Noir was still a great companion to bring depth and intensity to this exquisite fried rice.
Finally, we had the exotic Hawthorn Ice Cream with Chinese Sweet Vinegar Caramel and Traditional Onion Pancake. This outstanding dessert offered an amazing play on sweet flavors and textures. It was paired with the Moscato d'Asti by Pelissero to bring more complexity to the plate with tropical notes, delicious contrast and beautiful softness.
As one of the most creative Asian pioneers of modern Chinese cuisine, Chef Jeremy Leung offered us an unforgettable tasting experience for his last visit in Manila. We now look forward to exploring the rest of the new menu at China Blue in Conrad Manila, and particularly the Whole Roasted Peking Duck served two ways and wide selection of amazing Dim Sums.
